CRUNCHY OAT & APRICOT BISCUITS

These are probably my favourite biscuits because I love oats and apricots. I have been making them for many years and would like to share the recipe with you. You will need two baking trays

Ingredients:

  • 110g (4oz) self raising flour
  • 1 teaspoon bicarbonate of soda
  • 75g (3oz) porridge oats
  • 75g (3oz) caster sugar
  • 110g (4oz) margarine
  • 2 teaspoons golden syrup
  • 2 teaspoons hot water
  • Few drops almond extract
  • 25 g (1oz) ready to eat dried apricots

Method:

Heat the oven to Gas 4/180C/ fan 160C, Grease the baking trays.

Sieve the flour and bicarbonate of soda into a mixing bowl. Add the oats and sugar. Rub in the margarine. Chop the apricots and add them.

Mix with the syrup, water and almond extract, knead together.

Divide into 24 pieces and form into balls. Place 12 on each baking tray, press lightly on each ball.

Bake for 15 – 20 minutes until golden brown. Don’t overbake or they will become too hard

Remove onto a cooling rack. When cold store in an airtight container.
